Raw Vegetable Soup

I’ve been experimenting with making better use of my Vitamix. So, in addition to the various smoothies we make every day, I decided to create a delicious soup recipe that would be equally quick and easy to make.

This is what I came up with – a simple soup that would be perfect as an appetizer, before pretty much any meal (I read some time ago that eating soup before a meal tends to decrease the total amount eaten during the meal, and it a great way to lose weight without having to consciously limit what you eat).

Raw Vegetable Soup Recipe (serves 4)

Go Green with Vitamix

4 cups hot water
3 medium carrots, quartered
3 stalks of celery, quartered
1 medium tomato
1 vegetable bouillon cube
1/2 avocado

Add water, carrots, celery, tomato, and bouillon cube to Vitamix; blend on high for 5 minutes. Add avocado, blend another 30 seconds on medium. Serve, with salt and pepper to taste.
