My own suggestion is a delicious, kid-friendly Mexican Black Bean casserole, posted at Naturally Radiant, “a fantastic dish filled with nutritious black beans; AND it’s great for leftovers the next day for lunch!”
Boulder Foodie has three suggestions:
* a delicious pasta dish – Night(shade) Pasta, saying “Pasta with 3 nightshades: eggplant, tomatoes, and paprika!”
* a cheese vegetable main course – Lasagnaesque Eggplant and Squash, saying, “Eggplant, Squash, Tomato Sauce, and Cheese! Not really lasagna, but just as good!”
* a wonderful southwestern quinoa dish – Keen for Quinoa, saying, “Southwestern Red and Black Quinoa with sweet corn, bell pepper and onion”
Annette Berlin presents super-quick and easy Vegetarian Almost-Joes, posted at Craft Stew, saying, “Serve Vegetarian Almost Joes with brown rice for a quick and delicious meal.”
Corinne Goff presents a 4-ingredient Sweet Coconut Red Curry Quinoa, posted at RI Nutrition Housecalls, saying, “A little spicy, a little sweet, and a lot of fantastic flavor!”
The Type-A Housewife presents a one-week vegetarian meal-plan, posted at The Type-A Housewife, hmmmm – veggie burgers with carmelized onions!”
